Appearance: Very pale straw.
Aroma: Perfumed apple blossom, lemon drop and bright Granny Smith apples with a hint of ginger spice.
Palate: Delicate yet powerful flavours of lemon sherbert, finger lime and apricot layered with a wet-stone minerality. An elegant green apple acidity provides a long, clean finish.

Selectively machine harvested in the cool of the night. Free run (500L/T) and pressings separated and lightly fined before clarification (traditional cold settle) and fermentation. The neutral yeast strain is used to highlight the natural fruit characteristics of the vineyard. Fermented cool (<15°C) in stainless steel to dryness. The wine was racked post-fermentation, and light lees were retained with regular stirring. Blended to taste with a light fining before bottling.

The winter preceding the 2025 growing season was drier than average, followed by another notably warm season (the second in succession for the Great Southern). Harvest began almost four weeks earlier than usual, with early-ripening reds such as Pinot Noir picked alongside the white varieties. Careful canopy management and judicious irrigation were crucial in maintaining fruit exposure and vine health throughout the season. Yields were moderate to slightly above average and impressively, natural acidity remained high, with fruit showing excellent flavour concentration and purity.
