2021 Wyjup Collection Shiraz

Appearance: Deep violet.

Aroma: Aromatics of blueberry, cracked black pepper, violets and roast meats unfurl in the glass.

Palate: The palate is plush yet taut, offering dark berry fruit layered with black olive, fresh thyme and graphite. Fine-boned tannins frame the finish, showing the elegant structure Mount Barker Shiraz is known for.

Sourced from Bouverie block, fruit was cold soaked for 7 days in open fermenters before fermentation commenced with a combination of rack and return and pump-overs used. The wine was pressed at dryness and matured in 100% French oak (30% new) for 18 months.

8.5/10 A warm March accelerated ripening across all varietals, especially Shiraz and Cabernet. February rain refreshed vine canopies, while cool nights in March preserved acidity in aromatic whites. Cyclonic rain from ex–Tropical Cyclone Seroja briefly delayed Cabernet harvests at Wyjup, but fine weather returned, allowing for extended hang time and excellent flavour development.
