Palate: Generous in weight yet beautifully balanced, the palate centres around a bright lime-citrus core with subtle mineral undertones. Lively natural acidity provides structure and drive, carrying the abundant fruit through to a long, clean, and refreshing finish.

Selectively machine harvested in the cool of night, fruit was gently pressed with free-run juice (500L/T) and pressings kept separate. The juice was lightly fined before clarification and fermentation using Riesling-specific yeast strains to accentuate the vineyard’s pure fruit expression. A cool stainless-steel ferment (<15°C) was carried to dryness, followed by racking and retention of light lees with regular stirring to enhance texture and complexity. The final blend was assembled to taste, given a delicate fining, and bottled to preserve freshness and vibrancy.

The winter preceding the 2025 growing season was drier than average, followed by another notably warm season (the second in succession for the Great Southern). Harvest began almost four weeks earlier than usual, with early-ripening reds such as Pinot Noir picked alongside the white varieties. Careful canopy management and judicious irrigation were crucial in maintaining fruit exposure and vine health throughout the season. Yields were moderate to slightly above average and impressively, natural acidity remained high, with fruit showing excellent flavour concentration and purity.
